Could Someone Give me Advice on Building a Budget-Friendly Home Server for Media and Backup Purposes?

I am looking to build a budget friendly home server for media storage and backup purposes. I have been reading through the forum and some of the recommended builds; but I wanted to get some personalized advice to ensure.

I want to store a large collection of movies; TV shows; and music; and be able to access them easily over my home network. Ideally; the server should support Plex or Jellyfin for streaming to devices like Roku; smart TVs; and PCs.

I need reliable backup storage for my important documents, photos, and videos. This could either be through a direct connection or a cloud sync option, but I prefer a local backup as the primary method.

I was thinking about going with something like an Intel i3 or Ryzen 3; but I am unsure if that is overkill for my needs. I am leaning towards something with at least 4-8GB of RAM and good expandability for future upgrades.

The NK6 guide sounds perfectly suited, probably the highly recommended Dell 3630 based version.
