Hello I would like some feedback on what parts I should get for building my own server for Jellyfin. I know a lot more about windows but if Linux is not that bad setting up I wouldn’t mind using that. I want a traditional desktop case that has a lot of hard drive bays for my media storage.

That is probably your best starting point for a new server build.
The recommended case currently is the Cooler Master N400 Its reasonably priced $75 - $85 typically and has lots of space for 3.5" drives. Its a full sized tower though so make sure you have room for it.
