Is the only thing needed to run it an SSD? If I wanted to upgrade to 16GB of ram could I buy another 8 or would I need an 8x2 kit?
All you need is an SSD. I can link you the exact 8GB stick I have in it, you can add one more for 16GB.

Thanks for the info! Do you know if there’s any difference in quicksync quality between UHD versions? I’m going to be using this for a Plex transcode server and I noticed that the G4900 has UHD 610 (Intel® Celeron® G4900 Processor (2M Cache, 3.10 GHz) Product Specifications)
I believe there are processors with 630. Does that simply affect speed or also quicksync capabilities?
That’s exactly what I was using this box for before I put it up for sale.
As far as I can tell, the different models of UHD graphics within each generation only affect the speed, but only marginally.
The G4900 is capable of 21 1080p transcodes in my testing.
